Proper Diet to Fuel Your Wellness Journey

Self-proclaimed "foodie" and CORE57 member, Kim Panther, began working with our in-house Nutrition Coach, Rebecca Pedrick-Graybeck, earlier this year. When she came to us, she shared that she had only had success in the past with weight loss by using extreme low-carb diets.

We asked her what inspired her to try a new approach to nutrition instead of continuing low-carb diets. She said, "I know that approach is unhealthy for me, and I could tell because my gut health suffered greatly. My stomach bothered me all the time, but I just assumed it was due to my gallbladder removal. Come to find out, my body couldn't tolerate so much fat."

Not only did fad dieting wreak havoc on her digestion, but it hindered her physical performance.

"I wasn't fueling my intense workouts due to lack of good carbs," she explained.

And, since Kim was resorting to a “starvation diet” and not getting the balanced fuel she needed, she knew it wasn't sustainable. Plus, as a foodie, she wanted to be able to eat the foods she enjoyed. She told us, "It was also not a sustainable approach for me either, because I do not want to live my life so restricted."

Creating a “Foodie-Approved” Meal Plan

After struggling to get results from the restrictive methods she tried in the past, Kim decided to partner with our Nutrition Coach to create a plan for her personal wellness journey based on her individual body and goals - keeping her love of food in mind.

The result? 

Kim lost 20 pounds of pure BODY FAT and over 16 inches all over her body! And, she feels amazing!

She told us, "Thankfully, I have learned from Rebecca how to eat for MY unique body, in a way that I can truly maintain for the rest of my life, WITH CARBS! PLUS, it's ACTUALLY enjoyable, I TRULY LOVE what I'm eating!"

Throughout her nutrition coaching program, Kim found ways to eat the foods she loved, while fueling her body for her active lifestyle. "I love to cook and have found ways to tweak some of our favorite family recipes, as well as tons of new meal ideas! I learned that small things can really make a big difference, and fat loss doesn't have to be miserable!" she said.

"Nutrition coaching with Rebecca was AMAZING, because I felt supported in a way I never have before. She was my biggest cheerleader, and gave me tough love when needed. She quizzed me on foods that I love, and food that I felt I was missing out on throughout the process, and we worked to include them and/or find equally satisfying alternatives. She's incredible!"

Kim's nutrition journey did more than help her with weight loss and fuel her body to keep up with workouts, "This was absolutely life-changing! I not only feel better physically, but the difference in my mental state is mind-blowing to me,” said Kim. “I honestly feel fantastic! This was so much easier than I ever imagined!"
