Apples are in season and fall is around the corner. These are the perfect pancake – tastes awesome and no guilt! The recipe can easily be doubled or tripled to feed the masses! You can even make them on a weekend and freeze for you to enjoy throughout the week!

YIELDS: 8 small pancakes 
PREP TIME: 10 mins
TOTAL TIME: under 30 mins

Ingredients:

  • 2 eggs, whisked
  • 2 bananas, mashed
  • 1 peeled apple, diced small
  • 2 T. almond butter
  • 1 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 tsp pure vanilla extract
  • a pat of coconut oil for greasing your pan

Preparation:

  1. Mash the 2 bananas with a fork
  2. Whisk 2 eggs in a medium bowl
  3. Add banana mash to eggs
  4. Core and dice 1 apple in small pieces
  5. Stir bananas, eggs and apple chunks together
  6. Add almond butter, spices and vanilla
  7. Heat pan on medium low and add a thin layer of coconut oil. Pour the pancake batter and keep the size to no wider than your spatula or they will break apart when flipping. When one side is golden brown, gently turn over to cook the other side
  8. Top with fresh fruit or raw maple syrup. Even though the picture shows butter (because that will make your mouth water), if you add butter, you will negate the paleo title:)
